Creamy samp,spinach and beef stew

Ingredients:

For the Creamy Samp:

  • 2 cups samp, soaked overnight
  • Water, for boiling
  • 1 teaspoon salt
  • 1 cup heavy cream or coconut milk
  • 2 tablespoons butter (optional)

For the Beef Stew:

  • 2 pounds beef stew meat, cut into chunks
  • Salt and pepper, to taste
  • 3 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 cup red wine (optional)
  • 1 teaspoon dried thyme
  • 2 bay leaves

For the Spinach:

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 large bunch fresh spinach, washed and chopped
  • Salt and pepper, to taste
