South African Braai

A “braai” is more than just a method of cooking in South Africa; it’s a cultural tradition that brings friends and family together. Meats like beef, lamb, chicken, and boerewors (a type of sausage) are marinated and then grilled over charcoal or wood fires.

Braai Marinade (Basic):

  • 1 cup red wine vinegar
  • 1 cup olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • Salt and pepper to taste
  • Your choice of meat

Instructions:

  1. Mix the Marinade: Combine all the marinade ingredients in a bowl. Place the meat in a dish or resealable plastic bag and pour the marinade over it. Marinate for several hours or overnight in the refrigerator.
  2. Prepare the Braai: Light your charcoal or wood fire and let the flames die down to coals.
  3. Grill the Meat: Remove the meat from the marinade and grill it over the coals, turning frequently until cooked to your liking.
  4. Serve with sides such as pap (a type of maize porridge), salads, and grilled vegetables.

These recipes offer just a glimpse into the rich culinary world of South Africa. Whether you’re making a comforting bobotie or gathering around the fire for a braai, South African cuisine has a warmth and depth that’s truly special.
