  • 1 cup (200g) granulated sugar

  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs, at room temperature
  • 1/2 cup (120ml) milk
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup (150g) blueberries (fresh or frozen; if using frozen, do not thaw)

For the Lemon Glaze:

  • 1 cup (120g) powdered sugar
  • 2-3 tablespoons lemon juice
