Honey and Garlic Salmon by Dave Birks

1. Prepare the Salmon:

  • Season the salmon fillets with salt and pepper to taste. Set aside.

2. Make the Honey Garlic Glaze:

  • In a small saucepan over medium heat, combine the honey, minced garlic, soy sauce, and apple cider vinegar. Stir well to combine.
  • If you prefer a thicker glaze, mix the cornstarch with the 2 tablespoons of water in a separate bowl until smooth. Add this mixture to the saucepan.
  • Bring the glaze to a slight boil, then reduce the heat and simmer for 2-3 minutes, or until slightly thickened. Remove from heat.

3. Cook the Salmon:

  • Heat the olive oil in a large skillet over medium-high heat. Add the salmon fillets, skin-side up, and sear for about 4 minutes, or until they have a nice crust.
  • Flip the salmon and cook for another 2-3 minutes on the skin side, or until the salmon is nearly cooked through.

4. Glaze the Salmon:

  • Reduce the heat to low. Pour the honey garlic glaze over the salmon fillets in the skillet. Cook for another 1-2 minutes, spooning the glaze over the salmon as it cooks.

5. Serve:

  • Once the salmon is cooked through (it should flake easily with a fork), remove from heat. Serve the salmon with extra glaze spooned over the top and your choice of sides, such as steamed vegetables or rice.

Tips:

  • Salmon Skin: Cooking the salmon skin-side down for the second half of cooking time helps to keep the fillet moist and tender.
  • Glaze Consistency: Adjust the thickness of the glaze to your preference by varying the amount of cornstarch and water. Remember, the glaze will thicken further as it cools.
  • Serving Suggestions: This dish pairs wonderfully with a side of jasmine rice, quinoa, or a light salad to complement the rich flavors of the honey and garlic glaze.
